The nougat crossed the sea to Keelung, becoming a beloved local sweet

In 1949, when air travel was rare, a pastry chef from Shanghai—some say from Hong Kong—arrived in Keelung, Taiwan’s busiest port, bringing nougat-making skills that soon took root.

Taiwan’s cold winters made sweets a symbol of warmth and joy, turning nougat into a Lunar New Year favorite.

A bakery in Keelung became the first in northern Taiwan to handcraft nougat, later evolving into a renowned specialty shop in the 1990s.

Hotel Royal refined the flavor

Royal refined select ingredients to create a balanced, tender nougat for all ages

In 2006, President Lin Ching-Po of Royal Hotel Group received nougat from a friend in Keelung. Impressed by its taste, he asked Chef Lin Cheng-Hsien of Hotel Royal-Nikko Taipei to research the recipe.

Chef Lin consulted industry experts and friends, learning that the market offered only almond and peanut nougats, with textures varying widely—some too hard, others overly sticky.

He sampled nougats from shops across Taiwan, analyzing their strengths and weaknesses, then refined the recipe through detailed study of each ingredient. After years of testing and adjustment, he finally created a perfectly balanced nougat—soft yet firm, with a superior texture loved by all ages.
